Howdy Folks!
In these tough economic times, a little creativity can go a long way in getting a meal to the table at minimal cost. And one thing I’ve found to be affordable, easy to cook and also tasty is Chicken livers! I like them, and if you are so inclined, then try this recipe 😉
Some of the key ingredients you’ll need are fresh chicken livers of course, crushed chillies (optional), black pepper, paprika, Worcestershire sauce, 1 chicken stock cube, olive oil, Garlic and 2 tablespoons of tomato sauce.
In 2 Tablespoons of Olive Oil, fry your Chicken livers on medium heat. To that, then add 2 large cloves of garlic (chopped), add in your seasonings and then a crumbled chicken stock cube.
Allow this to cook for a few minutes before adding in your paprika and Worcestershire sauce (I love that stuff). In the meantime, combine your 2 Tablespoons of Tomato sauce with 1/3 of a cup of water, then add the mixture to the pan. Let it simmer for a couple of minutes until it caramelises into this lovely sauce 🙂
Onto the veggies now 🙂
I did a medley of cauliflower, broccoli and carrots, with spring onions, and green pepper. The tomatoes didn’t make it, sorry 😉
Break up the cauliflower and broccoli into small florets.
To a saucepan, add 2 tablespoons of oil, the chopped green pepper, and also the spring onions. Saute for 2-3 minutes and then shred/grate in 1 carrot.
Once the carrots are fairly cooked but still crunch, mix in the broccoli and cauliflower. Sprinkle in some Aromat (table seasoning). These go in last, because they cook quickly. You don’t want them overcooked and mushy 😉
And when its all said and done, this is how I put it together. Feel free to add a starch, but for me…that’s where my strength ended lol. I thouroughly enjoyed eating this…and Hope you will too!
