Meatloaf has got to be among my most favorite meat dishes to eat. I can’t remember who made the first one I ate…but I think it was my mom. 😊
I adopted and often prepare this American staple for many reasons. Its easy to make, very delicious and it is…unique 😊. Imagine slicing through a loaf of meat at the dinner table. 🤩
I recommend you try it! Here’s what you’ll need :

800g Ground beef
1 Cup Breadcrumbs
1/2 Teaspoon Salt
3/4 Teaspoon black Pepper
1 Large red Onion
2 Cloves of Garlic
1 Teaspoon smoked Paprika
2 Teaspoons Italian Seasoning
Fresh Coriander leaves
2 Eggs
1/2 cup Tomato ketchup
1/4 Teaspoon Garlic powder
1 Teaspoon brown Sugar
1 Tablespoon Worcestershire sauce
1 Tablespoon Soy Sauce
Directions
- Start by heating the oil and sauteing the red onions and Garlic, for about 5 minutes, or until the onions start to become translucent. 😊
- Once done, transfer the onions to a bowl with the ground beef, and combine. 😊
- To that, add the remaining ingredients, starting with the cup of breadcrumbs, the black pepper, smoked paprika and Italian seasoning. 😊
- Chop up some fresh Coriander leaves to add to the mix. It will bring such a freshness that you can’t exactly get from dried herbs. 😊
- Once you add the Coriander to the bowl, break in the two eggs. This is your binding agent that will make sure everything holds together. 😊
- Combine well with a wooden spoon. Don’t over-mix! 😉
- Transfer the mixture to a slightly greased loaf pan and press the mixture down with a spoon to make sure it’s compact and molds together.😊
- Bake uncovered in the oven at 200 degrees Celsius for about 40 minutes. ⏰
- While that’s baking, you want to prepare the glaze for the top. 😊 Whisk together in a saucepan the ketchup, sugar, Soy sauce, Worcestershire sauce, salt & pepper. Add a couple of tablespoons of water if the sauce is too thick. It needs to be a pouring consistency. 😊 Let that boil together for a couple of minutes before pouring.
- Once the loaf is ready, transfer it to a serving dish, or another deep container. Pour the glaze over the meatloaf, and return it to the oven for about 15 minutes, before its completely done cooking. 😊
- Allow the meatloaf to rest for about 10 minutes, then proceed to slice the meatloaf to your desired thickness, and serve! 😊
- This one went with some gravy, butternut mash and sauted broccoli! Totally delicious! 😋 I’m still recovering…😂
