Mock Greek Salad

Summer’s almost here, so it’s the best time to make some light and fresh meals, with all the fruits and veggies in season.

FYI – Fruit and Vegetables are good for you, and should be eaten often!!

Now that that’s out of the way ;), here’s a quick recipe for a Mock Greek salad I recently made. ‘Mock’ because a traditional, traditional Greek salad uses cucumber and Olives instead of grapes and lettuce, BUT this salad worked well, nonetheless :). It was fruity and crunchy, and Grapes are a good substitute for folks who are allergic to, or just don’t like olives. And I do know quite a few of those. They actually ate this very salad 😉

Easy to put together and lovely to eat, here’s the recipe below:

Ingredients

  • 1/2 head of fresh, crisp Lettuce

  • 1 bunch of Red Grapes

  • 1 Medium Tomato

  • Feta Cheese

  • 1/2 Medium Onion

  • Salt and Pepper

  • 1/2 Medium Green Pepper

  • Greek Salad dressing

Directions

  • When it comes to salads, everything rises and falls on your ingredients. So make sure everything is fresh and crisp. Starting with the lettuce. But make sure to wash it first 😉
  • In your salad bowl or any suitable container, break up your lettuce leaves by hand into reasonably sized pieces. Add to that the remaining veggies : Onion, Green pepper and Red Peppers, cut in similar shapes/sizes.
  • Next are the grapes. They too need to be washed before use 🙂
  • Add those to the bowl (whole or cut in half. Either is fine), and add your tomatoes as well.
  • Next we have Feta Cheese.
  • Crumble the cheese into smaller pieces on top of the veggies, and then drizzle with Greek salad dressing. You can make your own dressing (will post the recipe later) or you can use a store bought one if you don’t have the time to make a dressing from scratch 😉
  • Toss well and Serve with your favorite meal.
